Why Elevenses?
Elevenses, in the UK and Ireland, is like afternoon tea, but in the morning, and as the name implies, happens around 11:00 am, which is a great time for tea and a light snack. We will fine-tune the topic to suit the season and our mood. So let's jump right in!
Ancient and Artisan
Today's tea is Ancient Artisan Yunnan Black Tea. It's a very rare black tea grown in a biodiverse environment in the Yunnan Province. Tis tea can be purchased from my tea teacher Shana Zhang at WildTeaQi! Shana is also the founder of International Tea Academy where I am educated and also associated with via my Tea Sommelier Training Courses!
Black Beauty
This ancient black beauty is harvested from tea trees that are 500-800 years old, and it gives this tea extra power. It's a full-bodied, complex, and very elegant black tea that begins with fruity and ends with floral flavors. This tea can be aged, and it belongs to the fire element, which means it will increase your circulation, warm your body, and awaken your mind without making you jittery. This tea can be enjoyed all year round, but it's especially good to drink during the colder months. It will benefit your stomach (digestion) and spleen. The spleen plays a key role in our muscle tone and digestion, and helps to distribute nutrients through the body.
Steep this tea several times
Ancient Artisan Yunnan Black tea can be steeped several times on the same leaves. If you are familiar with the Gong Fu Cha procedure, then add 6 g of tea and take 200 ml of water, and you will be able to steep this tea for at least 6-8 rounds. If you steep Western style, you can do it like this:
-Heat up and cleanse your teaware (cup with a lid or a smaller teapot, always cover your steeping vessel, because tea contains loads of volatile aromas that will escape without a lid)
-Take 3-4 g of tea per 200 ml of water, heat the water to a boil and let it calm (ca 97°C)
-Rinse the tea once in the hot water (ca 97°C) by pouring it over the leaves to awaken them, wait 2-3 seconds, then discard the water.
-Steep for 30-50 seconds the first time
-Repeat and steep again 4-5 times on the same leaves and increase steeping time by 15-30 seconds each time
-Enjoy!
